Bon Appétit serves Case’s campus more than just food—they’re also providing members of our community an opportunity to make the world a better place. Now that’s nourishment! As Case’s primary food service provider, Bon Appetit aims to be the “food service for a sustainable future.” This goal is not lost in the services provided here at Case. Bon Appétit’s marketing manger Emily De Mers says that their primary goal is “to provide the best food in most sustainable way.” De Mers also hopes to help people learn about sustainability by being a bridge between the University community and the company.

Bon Appétit has an ongoing program called the Eat Local Challenge, which dares our campus food service team to create meals completely of ingredients from within a 150 mile radius of Case. Currently, more than 30% of each meal in the dining halls or purchased in a Bon Appetit eatery on campus is procured from local products. Bon Appetit serves 400 other universities and colleges, in addition to corporate campuses. At each of their sites, Bon Appetit is practicing the Eat Local Challenge, making a huge impact on environment and community nation wide.

There are many ways to promote a more sustainable future. Bon Appetit features many environmentally-friendly products at their café. Bags are biodegradable and packages are made from recycled products and they continue to search for more ways to reduce our campus’ environmental footprint on a daily basis. You can often see the changes at your favorite café. They are making meals from scratch at BRB Café, Tomlinson Marketplace, the Fribley Marché, and Leutner Resident Dining Café, reducing food wastes dramatically. They also provide fair trade coffees at various venues.
