Background

Hope Barkoukis is a registered dietitian who received her Ph.D. in Nutrition from CWRU. Prior to joining the faculty she was a corporate nutrition consultant for Fortune 500 companies specializing in wellness and sports nutrition, a clinical research dietitian, and on the faculty of Cleveland State University. While at Cleveland State, she was the Director of the Nutrition Education and Training Center. This was a federally funded program designed to foster the integration of nutrition education into public (K through 12) school curriculums.

Dr. Barkoukis completed advanced training in culinary arts and has taught healthy cooking courses for television audiences as well as professional and community groups. She has conducted research in the areas of insulin resistance and substrate utilization in hepatic cirrhosis, as well as the use of low glycemic dietary interventions to modulate insulin sensitivity.

Currently Dr. Barkoukis is an undergraduate nutrition advisor and teaches Nutrition 342: Food Science; Nutrition 440: Nutrition for the Aging and Aged; Nutrition 343: Dietary Patterns; Nutrition 364: Vitamins; and Nutrition 388: Nutrition for Sports and Fitness.

Dr. Barkoukis was the recipient of the 2001 John S. Diekhoff Award for Distinguished Graduate Teaching awarded by the CWRU School of Graduate Studies.

 


RESEARCH INTERESTS

1.   Nutritional management of chronic liver diseases such as cirrhosis and hepatitis C;

2.   Nutritional issues in the elderly including determination of nutritional status, factors influencing insulin sensitivity, use of the glycemic index to modulate weight and glucose metabolism, sports nutrition and dietary supplementation issues;

3.   Issues of food safety;

4.   Dietary supplement use, abuse, fraud.
