Since the 1950s Israeli and Lebanese chefs have argued over which nation owns the origination of hummus. Is it Israeli, Lebanese, or something else? In the early 2000s Israel and Lebanon became embroiled in an ongoing battle for the Guinness book of world records title of the World’s largest hummus plate. A hallmark of the modern invention of the nation state, the argument over ownership of this truly amazing food is unnecessary. Reimagining foods like hummus, falafel, shakshoukah, and others into Levantine cuisine remakes the conflict into something that can bring us all together across borders.
